Description

A flavorful and easy black bean soup with a zesty kick.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Optional toppings: cilantro, avocado, sour cream, tortilla chips


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and cook until softened, about 5-7 minutes.
  3. Add garlic, cumin, chili powder, and smoked paprika. Cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and bring to a simmer.
  5. Add black beans and simmer for 15 minutes, allowing flavors to meld.
  6. Stir in lime juice.
  7. Season with salt and pepper to taste.
  8. Serve hot, with your favorite toppings.

Notes

  • For a creamier soup, blend about 1 cup of the soup before adding the lime juice.
  • Adjust the chili powder and cumin to your spice preference.
