A flavorful and easy black bean soup with a zesty kick.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 4 cups vegetable broth
- 2 (15-ounce) cans black beans, rinsed and drained
- 1 tablespoon lime juice
- Salt and pepper to taste
- Optional toppings: cilantro, avocado, sour cream, tortilla chips
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion and cook until softened, about 5-7 minutes.
- Add garlic, cumin, chili powder, and smoked paprika. Cook for 1 minute more until fragrant.
- Pour in vegetable broth and bring to a simmer.
- Add black beans and simmer for 15 minutes, allowing flavors to meld.
- Stir in lime juice.
- Season with salt and pepper to taste.
- Serve hot, with your favorite toppings.
Notes
- For a creamier soup, blend about 1 cup of the soup before adding the lime juice.
- Adjust the chili powder and cumin to your spice preference.
