Description
A flavorful and hearty wild rice pilaf with aromatic vegetables and herbs.
Ingredients
- 1 cup wild rice blend
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 clove garlic, minced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- Salt to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Rinse the wild rice blend under cold water.
- In a saucepan, combine the rinsed wild rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook until the vegetables are softened, about 8-10 minutes.
- Add the minced garlic, dried thyme, and black pepper to the skillet. Cook for 1 minute more until fragrant.
- Once the rice is cooked, fluff it with a fork.
- Add the cooked vegetables to the fluffed rice. Stir to combine.
- Season with salt to taste.
- Stir in the fresh chopped parsley.
- Serve hot.
Notes
- For a richer flavor, you can use chicken broth instead of vegetable broth.
- Add toasted nuts like pecans or walnuts for extra crunch.
- This pilaf can be made ahead of time and reheated.
