Wild Rice Pilaf

Description

A flavorful and hearty wild rice pilaf with aromatic vegetables and herbs.


Ingredients

  • 1 cup wild rice blend
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Rinse the wild rice blend under cold water.
  2. In a saucepan, combine the rinsed wild rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed.
  3. While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook until the vegetables are softened, about 8-10 minutes.
  4. Add the minced garlic, dried thyme, and black pepper to the skillet. Cook for 1 minute more until fragrant.
  5. Once the rice is cooked, fluff it with a fork.
  6. Add the cooked vegetables to the fluffed rice. Stir to combine.
  7. Season with salt to taste.
  8. Stir in the fresh chopped parsley.
  9. Serve hot.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • Add toasted nuts like pecans or walnuts for extra crunch.
  • This pilaf can be made ahead of time and reheated.
