Valentine’s Ganache Cookies

Description

Rich and decadent chocolate cookies filled with a smooth ganache.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream


Instructions

  1. Cream together butter and sugar until light and fluffy.
  2. Beat in egg and vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Stir in chocolate chips.
  6. Chill dough for at least 30 minutes.
  7. Preheat oven to 350°F (175°C).
  8. Drop rounded tablespoons of dough onto baking sheets.
  9. Bake for 10-12 minutes, or until edges are lightly golden.
  10. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  11. For the ganache, heat heavy cream until simmering.
  12. Pour hot cream over chocolate chips and let sit for 5 minutes.
  13. Whisk until smooth.
  14. Once cookies are completely cool, spread ganache on the bottom of one cookie and top with another.

Notes

  • For a festive touch, add red or pink food coloring to the cookie dough.
  • Store cookies in an airtight container at room temperature.
