Description
Rich and decadent chocolate cookies filled with a smooth ganache.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Cream together butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Stir in chocolate chips.
- Chill dough for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Drop rounded tablespoons of dough onto baking sheets.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- For the ganache, heat heavy cream until simmering.
- Pour hot cream over chocolate chips and let sit for 5 minutes.
- Whisk until smooth.
- Once cookies are completely cool, spread ganache on the bottom of one cookie and top with another.
Notes
- For a festive touch, add red or pink food coloring to the cookie dough.
- Store cookies in an airtight container at room temperature.
