A simple recipe for cute and delicious swirl cookies perfect for Valentine’s Day.
Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Red or pink food coloring
Instructions
- Cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Divide dough in half. Tint one half with red or pink food coloring.
- Chill both doughs for at least 30 minutes.
- Roll out each dough color into a rectangle.
- Stack the colored rectangles, then carefully roll them up together into a log.
- Wrap the log tightly in plastic wrap and chill for another hour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Slice the chilled log into 1/4-inch thick cookies.
- Place cookies on prepared baking sheets, leaving space between them.
- Bake for 8-10 minutes, or until edges are lightly golden.
- Let cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
- For a stronger swirl, you can chill the dough logs for longer, up to 2 days.
- Decorate with sprinkles or a simple glaze after cooling.
