Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup strawberry puree (from fresh or frozen strawberries, strained)
- Red food coloring (optional, for deeper pink color)
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Add the strawberry puree and red food coloring (if using) to the dough. Mix until the color is uniform and the dough is a consistent pink.
- If using, gently fold in the white chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a more intense strawberry flavor, you can add a tablespoon of freeze-dried strawberry powder.
- Ensure your strawberry puree is not too watery; strain it if necessary.
- These cookies are best stored in an airtight container at room temperature.
