Easy, chewy pink strawberry cookies perfect for Valentine’s Day or any sweet celebration.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup strawberry puree (from fresh or frozen strawberries, strained)
  • Red food coloring (optional, for deeper pink color)
  • 1/2 cup white chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract until well combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Add the strawberry puree and red food coloring (if using) to the dough. Mix until the color is uniform and the dough is a consistent pink.
  7. If using, gently fold in the white chocolate chips.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 9-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a more intense strawberry flavor, you can add a tablespoon of freeze-dried strawberry powder.
  • Ensure your strawberry puree is not too watery; strain it if necessary.
  • These cookies are best stored in an airtight container at room temperature.
