Description
Simple pinwheel cookies decorated with sprinkles, perfect for Valentine’s Day.
Ingredients
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Red food coloring
- Valentine’s Day sprinkles
Instructions
- Cream together butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Divide dough in half. Tint one half with red food coloring.
- On a lightly floured surface, roll out each half of dough into a rectangle.
- Layer the red dough on top of the plain dough.
- Roll up the dough tightly from the long end to form a log.
- Wrap the log in plastic wrap and chill for at least 1 hour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Slice the dough log into 1/4-inch thick cookies.
- Place cookies on prepared baking sheets, about 2 inches apart.
- Press sprinkles onto the tops of the cookies.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For sharper swirls, chill the dough for longer, up to 2 days.
- You can use different colors for a festive look.
- Store cookies in an airtight container at room temperature.
