Description

These cookies are a delightful treat for Valentine’s Day, featuring a sweet strawberry flavor and a festive look.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup strawberry jam
  • Red and pink food coloring (optional)
  • Sprinkles for decoration


Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half. Stir strawberry jam into one half of the dough. Add red food coloring if desired. Leave the other half plain or add pink food coloring.
  6. Chill both doughs for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Roll out the plain dough to about 1/4-inch thickness. Cut out heart shapes using a cookie cutter.
  9. Roll out the strawberry dough to about 1/4-inch thickness. Cut out slightly smaller heart shapes.
  10. Place the smaller strawberry hearts onto the larger plain hearts.
  11. Alternatively, you can make thumbprint cookies by pressing an indentation into plain cookies and filling it with strawberry jam.
  12. Place cookies on the prepared baking sheets.
  13. Bake for 8-10 minutes, or until the edges are lightly golden.
  14. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  15. Decorate with sprinkles once cooled.

Notes

  • For a stronger strawberry flavor, you can add 1 tablespoon of freeze-dried strawberry powder to the strawberry dough.
  • Ensure your butter is truly softened but not melted for the best cookie texture.
  • Do not overmix the dough once the flour is added.
