These cookies are a delightful treat for Valentine’s Day, featuring a sweet strawberry flavor and a festive look.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup strawberry jam
- Red and pink food coloring (optional)
- Sprinkles for decoration
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half. Stir strawberry jam into one half of the dough. Add red food coloring if desired. Leave the other half plain or add pink food coloring.
- Chill both doughs for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll out the plain dough to about 1/4-inch thickness. Cut out heart shapes using a cookie cutter.
- Roll out the strawberry dough to about 1/4-inch thickness. Cut out slightly smaller heart shapes.
- Place the smaller strawberry hearts onto the larger plain hearts.
- Alternatively, you can make thumbprint cookies by pressing an indentation into plain cookies and filling it with strawberry jam.
- Place cookies on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Decorate with sprinkles once cooled.
Notes
- For a stronger strawberry flavor, you can add 1 tablespoon of freeze-dried strawberry powder to the strawberry dough.
- Ensure your butter is truly softened but not melted for the best cookie texture.
- Do not overmix the dough once the flour is added.
