Description
A creamy and comforting sweet corn chowder.
Ingredients
- 4 cups fresh or frozen corn kernels
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and celery and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the corn kernels and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Pour in the milk and heat through, but do not boil.
- Season with salt and pepper.
- Ladle chowder into bowls and garnish with fresh parsley.
Notes
- For a thicker chowder, you can blend a portion of the corn and soup mixture before adding the milk.
- Add cooked bacon or ham for a heartier soup.
