Sweet Corn Chowder

Description

A creamy and comforting sweet corn chowder.


Ingredients

  • 4 cups fresh or frozen corn kernels
  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and celery and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the corn kernels and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Pour in the milk and heat through, but do not boil.
  5. Season with salt and pepper.
  6. Ladle chowder into bowls and garnish with fresh parsley.

Notes

  • For a thicker chowder, you can blend a portion of the corn and soup mixture before adding the milk.
  • Add cooked bacon or ham for a heartier soup.
