Description

Sweet and tender strawberry cookies with a delicate kiss of flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup strawberry jam or preserves
  • Red food coloring (optional)


Instructions

  1. Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
  2. Beat in the egg, vanilla extract, and almond extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. If using, add a few drops of red food coloring and mix until evenly distributed.
  6. Stir in the strawberry jam or preserves.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake at 350°F (175°C) for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger strawberry flavor, you can add 1 tablespoon of freeze-dried strawberry powder to the dry ingredients.
