Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup strawberry jam or preserves
- Red food coloring (optional)
Instructions
- Cream together the softened butter and granulated sugar in a large bowl until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using, add a few drops of red food coloring and mix until evenly distributed.
- Stir in the strawberry jam or preserves.
- Drop rounded tablespoons of dough onto ungreased baking sheets.
- Bake at 350°F (175°C) for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger strawberry flavor, you can add 1 tablespoon of freeze-dried strawberry powder to the dry ingredients.
