Slow Cooker Teriyaki Chicken

Description

Easy and flavorful teriyaki chicken made in your slow cooker.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Cooked rice, for serving
  • Chopped green onions, for garnish


Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, whisk together teriyaki sauce, soy sauce, brown sugar, ginger, and garlic. Pour over chicken.
  3. Cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through.
  4. Remove chicken from the slow cooker and shred with two forks.
  5. In a small bowl, whisk together cornstarch and water to create a slurry.
  6. Stir the cornstarch slurry into the sauce in the slow cooker.
  7. Turn the slow cooker to high and cook for another 10-15 minutes, stirring occasionally, until the sauce thickens.
  8. Return shredded chicken to the slow cooker and stir to coat with the sauce.
  9. Serve over cooked rice and garnish with green onions.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • You can substitute chicken breasts for thighs, but adjust cooking time as needed.
