Description

A simple and flavorful sheet pan meal featuring salmon and roasted vegetables seasoned with turmeric.


Ingredients

  • 1 lb salmon fillet
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss broccoli florets, red bell pepper, and red onion with olive oil, turmeric, garlic powder, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast for 15 minutes.
  5. Add the salmon fillet to the baking sheet, seasoning it with salt and pepper.
  6. Continue roasting for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Notes

  • You can substitute other vegetables like asparagus or Brussels sprouts.
  • For extra flavor, squeeze fresh lemon juice over the salmon before serving.
