Description

These red velvet thumbprint cookies feature a rich chocolate flavor and a sweet cream cheese filling.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. In a small bowl, combine the cocoa powder and red food coloring to form a paste. Add this paste to the butter mixture and mix until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth.
  8. Roll the cookie dough into 1-inch balls and place them on the prepared baking sheets.
  9. Using your thumb or the back of a small spoon, make an indentation in the center of each cookie.
  10. Fill each indentation with about 1 teaspoon of the cream cheese mixture.
  11. Bake for 10-12 minutes, or until the edges are set.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a more intense red color, you can add a little more red food coloring.
  • Ensure the cream cheese filling is not too runny before filling the cookies.
  • These cookies can be stored in an airtight container at room temperature for up to 3 days.
