A quick and easy recipe for pumpkin spice latte overnight oats, perfect for a grab-and-go breakfast.
Ingredients
- 1/2 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 2 tablespoons pumpkin puree
- 1 tablespoon chia seeds
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1-2 teaspoons maple syrup or sweetener, to taste
- Optional toppings: whipped cream, cinnamon, chopped nuts
Instructions
- Combine rolled oats, milk, pumpkin puree, chia seeds, pumpkin pie spice, vanilla extract, and sweetener in a jar or container.
- Stir well to combine all ingredients.
- Cover the container and refrigerate overnight, or for at least 4 hours.
- In the morning, stir the oats. If they are too thick, add a splash more milk.
- Add your favorite toppings and enjoy.
Notes
- For a richer flavor, use full-fat milk.
- Adjust the amount of sweetener to your preference.
- You can make a batch of these oats at the beginning of the week for easy breakfasts.
