Pumpkin Biscuits

Description

Fluffy and tender biscuits with a hint of pumpkin flavor.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 2 tablespoons melted butter, for brushing


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the pumpkin puree and milk.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round.
  7. Use a biscuit cutter or a knife to cut out biscuits. Place them on the prepared baking sheet.
  8. Bake for 12-15 minutes, or until golden brown.
  9. Brush the tops of the warm biscuits with melted butter.

Notes

  • For richer flavor, you can add 1 tablespoon of brown sugar to the dry ingredients.
  • Serve warm with butter, jam, or honey.
