Description
Soft and chewy pink velvet cookies with a hint of cocoa and a cream cheese frosting.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon red food coloring
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 tablespoon milk
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring.
- In a separate bowl, whisk together the cocoa powder, flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 9-11 minutes, or until the edges are lightly golden. The centers should still look soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the frosting. In a small bowl, beat together the softened cream cheese, powdered sugar, and milk until smooth and creamy.
- Once the cookies are completely cool, spread or pipe the cream cheese frosting onto the bottoms of half the cookies and sandwich them with the remaining cookies.
Notes
- For a deeper pink color, you can add a little more food coloring.
- You can add sprinkles to the dough before baking for extra decoration.
- Store cookies in an airtight container at room temperature for up to 3 days.
