Description

Soft and chewy pink velvet cookies with a hint of cocoa and a cream cheese frosting.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon red food coloring
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon milk


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring.
  4. In a separate bowl, whisk together the cocoa powder, flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  7. Bake for 9-11 minutes, or until the edges are lightly golden. The centers should still look soft.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies cool, prepare the frosting. In a small bowl, beat together the softened cream cheese, powdered sugar, and milk until smooth and creamy.
  10. Once the cookies are completely cool, spread or pipe the cream cheese frosting onto the bottoms of half the cookies and sandwich them with the remaining cookies.

Notes

  • For a deeper pink color, you can add a little more food coloring.
  • You can add sprinkles to the dough before baking for extra decoration.
  • Store cookies in an airtight container at room temperature for up to 3 days.
