Description

Rich chocolate brownies with a refreshing peppermint flavor, topped with a peppermint glaze.


Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 4 ounces unsweetened chocolate, chopped
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon peppermint extract
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon peppermint extract
  • Red and green sprinkles (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Melt the butter and unsweetened chocolate together in a medium saucepan over low heat, stirring until smooth. Remove from heat.
  3. Stir the granulated sugar into the chocolate mixture.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and peppermint extract.
  5. In a separate bowl, whisk together the flour, baking powder, salt, and cocoa powder.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with moist crumbs attached.
  9. Let the brownies cool completely in the pan.
  10. Prepare the glaze: Whisk together the powdered sugar, milk, and peppermint extract until smooth.
  11. Spread the glaze over the cooled brownies.
  12. If desired, sprinkle with red and green sprinkles.
  13. Cut into squares and serve.

  • For a more intense peppermint flavor, you can add a few drops of peppermint oil to the batter.
