Description
A simple and satisfying one-pot meal featuring seasoned ground beef, rice, and melted cheese.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 1/2 cups uncooked white rice
- 3 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic, salt, pepper, paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Add uncooked rice and beef broth to the skillet. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and most of the liquid is absorbed.
- Remove the skillet from the heat. Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.
- Cover the skillet for 5 minutes, or until the cheese is melted and gooey.
- Serve hot.
Notes
- For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
- You can substitute other shredded cheeses like Colby Jack or mozzarella.
- Ensure the lid is tight-fitting to allow the rice to steam properly.
