Description

A simple and flavorful one-pan meal featuring chicken and broccoli coated in a savory honey soy sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb broccoli florets
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes (if using).
  3. Place chicken and broccoli on a large baking sheet. Drizzle with olive oil and toss to coat.
  4. Pour the honey soy sauce mixture over the chicken and broccoli. Toss everything together until well combined.
  5. Spread the chicken and broccoli in a single layer on the baking sheet.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  7. Serve hot over cooked rice, garnished with sesame seeds and green onions if desired.

Notes

  • For crispier broccoli, you can broil for the last 2-3 minutes of cooking, watching carefully to prevent burning.
