A simple and flavorful one-pan meal featuring chicken and broccoli coated in a savory honey soy sauce.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb broccoli florets
- 2 tablespoons olive oil
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Cooked rice, for serving
- Sesame seeds, for garnish (optional)
- Chopped green onions, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes (if using).
- Place chicken and broccoli on a large baking sheet. Drizzle with olive oil and toss to coat.
- Pour the honey soy sauce mixture over the chicken and broccoli. Toss everything together until well combined.
- Spread the chicken and broccoli in a single layer on the baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
- Serve hot over cooked rice, garnished with sesame seeds and green onions if desired.
Notes
- For crispier broccoli, you can broil for the last 2-3 minutes of cooking, watching carefully to prevent burning.
