North Pole Chocolate-Dipped Shortbread Bars

Description

Rich, buttery shortbread bars dipped in chocolate, perfect for holiday baking.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the vanilla extract.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Press the dough evenly into the prepared baking pan.
  7. Bake for 20-25 minutes, or until the edges are lightly golden.
  8. Let the shortbread cool completely in the pan.
  9. Once cooled, lift the shortbread out of the pan using the parchment paper. Cut into bars.
  10. Melt the chocolate chips and vegetable oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  11. Dip each shortbread bar halfway into the melted chocolate. Place on a wax paper-lined baking sheet to set.

Notes

  • For a festive touch, sprinkle the wet chocolate with colored sprinkles before it sets.
