Description

Simple maraschino cherry cookies with a sweet almond flavor.


Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup maraschino cherries, drained and chopped
  • Red food coloring, optional


Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the almond extract and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, add a few drops of red food coloring and mix until the dough is evenly colored.
  7. Gently fold in the chopped maraschino cherries.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  9. Bake for 8-10 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger cherry flavor, you can use the maraschino cherry juice in place of some of the liquid in another recipe, but be mindful of the added sugar.
  • Ensure your butter is truly softened, not melted, for the best cookie texture.
  • Do not overmix the dough after adding the flour to prevent tough cookies.
