Simple and sweet strawberry cookies perfect for Valentine’s Day.
Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup strawberry jam or preserves
- Red or pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If using food coloring, add a few drops to the dough and mix until evenly colored.
- Roll the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
- Using your thumb or the back of a small spoon, make an indentation in the center of each cookie.
- Fill each indentation with a small amount of strawberry jam or preserves.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger strawberry flavor, you can add 1 tablespoon of freeze-dried strawberry powder to the dough.
- These cookies can be stored in an airtight container at room temperature for up to 3 days.
