Description
A hearty and flavorful low-carb soup featuring cabbage and sausage.
Ingredients
- 1 pound Italian sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 head cabbage, shredded
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Brown the Italian sausage in a large pot over medium heat. Drain excess fat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the shredded cabbage, chicken broth, thyme, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the cabbage is tender.
- Serve hot.
Notes
- For a spicier soup, use hot Italian sausage.
- Add a splash of heavy cream for a richer soup.
