Keto Cabbage and Sausage Soup

Description

A hearty and flavorful low-carb soup featuring cabbage and sausage.


Ingredients

  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 head cabbage, shredded
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Brown the Italian sausage in a large pot over medium heat. Drain excess fat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the shredded cabbage, chicken broth, thyme, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the cabbage is tender.
  6. Serve hot.

Notes

  • For a spicier soup, use hot Italian sausage.
  • Add a splash of heavy cream for a richer soup.
