A delightful twist on a classic, these gingerbread oatmeal cream pies feature soft gingerbread cookies sandwiched with a creamy filling.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup molasses
- For the Filling:
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Stir in the molasses until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- While the cookies cool, prepare the filling. In a large bowl, beat the softened butter until creamy.
- Gradually add the granulated sugar, beating until well combined.
- Add the milk and vanilla extract, beating until the filling is smooth and fluffy.
- Once the cookies are completely cool, spread a generous amount of filling onto the bottom of one cookie and top with another cookie to create a sandwich.
- Repeat with the remaining cookies.

- For a stronger gingerbread flavor, you can increase the spices slightly.
