Description

A simple and flavorful side dish featuring fresh herbs and fluffy couscous.


Ingredients

  • 1 cup couscous
  • 1.5 cups boiling water or vegetable broth
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon chopped fresh chives
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In a medium bowl, combine the couscous, olive oil, salt, and pepper.
  2. Pour the boiling water or broth over the couscous mixture. Stir once.
  3. Cover the bowl tightly and let it sit for 5-7 minutes, or until the liquid is absorbed.
  4. Fluff the couscous with a fork.
  5. Stir in the chopped fresh parsley, mint, and chives.
  6. Serve immediately.

Notes

  • For a richer flavor, use vegetable broth instead of water.
  • You can add other herbs like dill or cilantro.
  • Lemon zest can add a bright citrus note.
