A simple and flavorful side dish featuring fresh herbs and fluffy couscous.
Ingredients
- 1 cup couscous
- 1.5 cups boiling water or vegetable broth
- 2 tablespoons olive oil
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh mint
- 1 tablespoon chopped fresh chives
- Salt to taste
- Black pepper to taste
Instructions
- In a medium bowl, combine the couscous, olive oil, salt, and pepper.
- Pour the boiling water or broth over the couscous mixture. Stir once.
- Cover the bowl tightly and let it sit for 5-7 minutes, or until the liquid is absorbed.
- Fluff the couscous with a fork.
- Stir in the chopped fresh parsley, mint, and chives.
- Serve immediately.

- For a richer flavor, use vegetable broth instead of water.
- You can add other herbs like dill or cilantro.
