Description

Healthy and delicious pancakes made with green smoothie ingredients and oatmeal.


Ingredients

  • 1 cup rolled oats
  • 1 cup spinach
  • 1/2 cup unsweetened almond milk
  • 1/4 cup Greek yogurt
  • 1 egg
  • 1 tablespoon honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Combine rolled oats, spinach, almond milk, Greek yogurt, egg, honey, baking powder, vanilla extract, and salt in a blender.
  2. Blend until smooth.
  3. Heat a lightly oiled griddle or frying pan over medium heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve immediately.

Notes

  • Top with fresh fruit, nuts, or a drizzle of maple syrup.
  • For a vegan option, use a flax egg and plant-based yogurt.
