Description

A quick and easy single-serving chocolate peanut butter cake made with Greek yogurt.


Ingredients

  • 1/4 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons unsweetened applesauce
  • 2 tablespoons milk
  • 1 tablespoon vegetable oil
  • 1 tablespoon peanut butter
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon chocolate chips (optional)


Instructions

  1. In a microwave-safe mug, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
  2. Add the applesauce, milk, vegetable oil, peanut butter, and vanilla extract. Stir until just combined and no dry streaks remain.
  3. If using, stir in the chocolate chips.
  4. Microwave on high for 60-90 seconds, or until the cake is set. Cooking time will vary depending on your microwave.
  5. Let cool slightly before enjoying.

  • For a richer flavor, use dark cocoa powder.
