Description
A quick and easy single-serving chocolate peanut butter cake made with Greek yogurt.
Ingredients
- 1/4 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons unsweetened applesauce
- 2 tablespoons milk
- 1 tablespoon vegetable oil
- 1 tablespoon peanut butter
- 1/4 teaspoon vanilla extract
- 1 tablespoon chocolate chips (optional)
Instructions
- In a microwave-safe mug, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
- Add the applesauce, milk, vegetable oil, peanut butter, and vanilla extract. Stir until just combined and no dry streaks remain.
- If using, stir in the chocolate chips.
- Microwave on high for 60-90 seconds, or until the cake is set. Cooking time will vary depending on your microwave.
- Let cool slightly before enjoying.
Notes
- For a richer flavor, use dark cocoa powder.
- Adjust cooking time as needed; be careful not to overcook.
- Serve warm with a scoop of ice cream or a dollop of whipped cream.
