Description

Easy gingerbread cookie bars with a chewy texture and classic spice flavor.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1/3 cup unsulfured molasses
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • Optional: 1/2 cup powdered sugar for dusting


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and both granulated and brown sugars until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the molasses and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Spread the dough evenly into the prepared baking pan.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool completely in the pan before cutting.
  9. If desired, dust with powdered sugar before serving.

Notes

  • For a stronger gingerbread flavor, you can add an extra 1/2 teaspoon of ground ginger.
  • Store cooled bars in an airtight container at room temperature for up to 3 days.
