Description
A creamy and flavorful soup made with cauliflower, garlic, and Parmesan cheese.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 head cauliflower, cut into florets
- 4 cups vegetable broth
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until cauliflower is tender.
- Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
- Return the soup to the pot. Stir in milk and Parmesan cheese. Heat gently until warmed through. Do not boil.
- Season with salt and black pepper to taste.
Notes
- For a richer soup, use heavy cream instead of milk.
- Garnish with extra Parmesan cheese and fresh parsley.
