Soft and chewy sugar cookies flavored with eggnog and topped with a festive frosting.
Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup eggnog
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the Frosting:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup eggnog
- 1 teaspoon vanilla extract
- Optional: festive sprinkles
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the eggnog, beginning and ending with the dry ingredients. Mix until just combined.
- Cover the dough and chill for at least 1 hour.
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- Roll the chilled dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- To make the frosting, beat the softened butter until creamy.
- Gradually add the powdered sugar, alternating with the eggnog, until smooth and creamy. Stir in the vanilla extract.
- Once the cookies are completely cool, spread or pipe the frosting onto the cookies.
- Decorate with sprinkles, if desired.
Notes
- Ensure your butter and eggs are at room temperature for best results.
- Do not overmix the dough once the flour is added.
- Chill the dough sufficiently to make it easier to handle.
- Adjust the amount of eggnog in the frosting to reach your desired consistency.
