Description
These cookies mimic the popular Crumbl Red Velvet Cupcake cookies with a soft, cake-like texture and cream cheese frosting.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon red food coloring
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups all-purpose flour
- For the Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup (1 stick) unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate small bowl, whisk together the cocoa powder, red food coloring, and white vinegar until combined. Add this mixture to the butter and sugar mixture and mix well.
- In another bowl, whisk together the baking soda, salt, and flour.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
- Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- To make the frosting: In a large bowl, beat together the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar, mixing until well combined.
- Stir in the vanilla extract and 2 tablespoons of milk. Add more milk, one tablespoon at a time, if needed to reach your desired frosting consistency.
- Once the cookies are completely cool, frost them generously with the cream cheese frosting.
Notes
- For a more intense red color, you can add a little more red food coloring.
- Ensure your butter and cream cheese are at room temperature for the best frosting texture.
