Description
A nourishing and light green vegetable soup designed for detoxification.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 4 cups vegetable broth
- 2 cups chopped kale
- 1 cup chopped spinach
- 1 cup chopped broccoli florets
- 1 cup chopped zucchini
- 1/2 cup chopped celery
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for 1 minute more until fragrant.
- Pour in vegetable broth and bring to a simmer.
- Add kale, broccoli, zucchini, and celery. Cook for 10-15 minutes, or until vegetables are tender.
- Stir in spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a smoother soup, you can blend it after cooking.
- Add a squeeze of lemon juice before serving for extra brightness.
