Detox Green Vegetable Soup

Description

A nourishing and light green vegetable soup designed for detoxification.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups vegetable broth
  • 2 cups chopped kale
  • 1 cup chopped spinach
  • 1 cup chopped broccoli florets
  • 1 cup chopped zucchini
  • 1/2 cup chopped celery
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and ginger and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and bring to a simmer.
  5. Add kale, broccoli, zucchini, and celery. Cook for 10-15 minutes, or until vegetables are tender.
  6. Stir in spinach and cook until wilted, about 2 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a smoother soup, you can blend it after cooking.
  • Add a squeeze of lemon juice before serving for extra brightness.
