Description
A light and healthy soup made with cabbage and carrots, perfect for a detox.
Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 head cabbage, shredded
- 4 carrots, sliced
- 6 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add cabbage and carrots to the pot.
- Pour in vegetable broth, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
- Serve hot.
Notes
- For a spicier soup, add a pinch of red pepper flakes.
- You can add other vegetables like celery or bell peppers.
