Detox Cabbage and Carrot Soup

Description

A light and healthy soup made with cabbage and carrots, perfect for a detox.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 head cabbage, shredded
  • 4 carrots, sliced
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Add cabbage and carrots to the pot.
  4. Pour in vegetable broth, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  6. Serve hot.

Notes

  • For a spicier soup, add a pinch of red pepper flakes.
  • You can add other vegetables like celery or bell peppers.
