Creamy Pea & Mint Soup

Description

A simple and refreshing soup perfect for a light meal.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups frozen peas
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh mint leaves, chopped
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in frozen peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Remove from heat and let cool slightly.
  5. Transfer soup to a blender and blend until smooth. You may need to do this in batches.
  6. Return soup to the pot. Stir in heavy cream and chopped mint.
  7. Heat gently until warmed through. Do not boil.
  8. Season with salt and pepper to taste.

Notes

  • For a vegan option, substitute the heavy cream with full-fat coconut milk.
  • Garnish with extra mint leaves or a swirl of cream.
