Description

A rich and creamy mushroom soup recipe.


Ingredients

  • 1 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add mushrooms and onion and cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and bring to a simmer.
  5. Reduce heat and let simmer for 15 minutes.
  6. Stir in heavy cream.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a smoother soup, blend with an immersion blender before adding cream.
  • Garnish with fresh parsley or chives.
