Description
A rich and creamy mushroom soup recipe.
Ingredients
- 1 tbsp olive oil
- 1 lb mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add mushrooms and onion and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth and bring to a simmer.
- Reduce heat and let simmer for 15 minutes.
- Stir in heavy cream.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a smoother soup, blend with an immersion blender before adding cream.
- Garnish with fresh parsley or chives.
