Description
A comforting and cheesy broccoli cheddar soup recipe.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups chicken broth
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded cheddar cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until broccoli is tender.
- Carefully transfer soup to a blender or use an immersion blender to puree until smooth.
- Return soup to the pot. Stir in milk, salt, and pepper. Heat gently over low heat, do not boil.
- Gradually stir in cheddar cheese until melted and smooth.
- Serve hot.
Notes
- For a thicker soup, use less broth or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) before adding the cheese.
- Garnish with extra shredded cheese or croutons if desired.
