Description

A classic side dish of spinach cooked in a creamy sauce.

Ingredients

  • 1 tablespoon butter
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, washed and tough stems removed
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add shallot and cook until softened, about 3 minutes.
  3. Add garlic and cook until fragrant, about 1 minute.
  4. Add spinach to the skillet in batches, allowing it to wilt before adding more.
  5. Cook until all spinach is wilted.
  6. Stir in heavy cream and Parmesan cheese.
  7. Cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  8. Season with salt and pepper to taste.

Notes

  • For a lighter version, you can use half-and-half instead of heavy cream.
  • Add a pinch of nutmeg for extra flavor.
