A simple and comforting pumpkin soup recipe perfect for a chilly day.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can pumpkin puree
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in pumpkin puree and vegetable broth. Bring to a simmer.
- Reduce heat and cook for 10 minutes, stirring occasionally.
- Stir in heavy cream, salt, pepper, and nutmeg. Heat through but do not boil.
- Serve hot.
Notes
- Garnish with toasted pumpkin seeds or a swirl of cream.
- For a thinner soup, add more vegetable broth.
