Cloud Bread Cinnamon Rolls

Description

A light and airy take on classic cinnamon rolls, made with cloud bread.


Ingredients

  • 4 large eggs, separated
  • 1/4 cup cream cheese, softened
  • 1/4 cup sweetener (erythritol or xylitol recommended)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Optional: 1 tablespoon melted butter for brushing
  • Optional: Extra sweetener and cinnamon for topping


Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the egg yolks, softened cream cheese, sweetener, and vanilla extract until smooth.
  3. In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
  4. Gently fold about one-third of the beaten egg whites into the yolk mixture to lighten it. Then, carefully fold in the remaining egg whites until just combined, being careful not to deflate the mixture.
  5. Spread the cloud bread batter thinly and evenly onto the prepared baking sheet.
  6. Sprinkle the cinnamon and nutmeg evenly over the batter.
  7. Carefully roll up the batter from one end to the other, like a jelly roll, creating a log.
  8. Slice the log into 1-inch thick rolls.
  9. Place the rolls onto the baking sheet, cut-side up.
  10. Bake for 20-25 minutes, or until lightly golden and set.
  11. If desired, brush the warm rolls with melted butter and sprinkle with extra sweetener and cinnamon.

Notes

  • Ensure your egg whites are completely free of yolk for best results.
  • Do not overmix the batter once the egg whites are added.
