Classic Tomato Basil Soup

Description

A simple and flavorful tomato basil soup.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup fresh basil leaves, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes and vegetable broth. Bring to a simmer.
  4. Reduce heat and let simmer for 15 minutes.
  5. Stir in fresh basil, salt, and pepper.
  6. Serve hot.

Notes

  • For a creamier soup, stir in 1/4 cup heavy cream before serving.
  • Garnish with extra basil leaves or a swirl of cream.
