Description

A delightful fusion of cinnamon roll flavors and sugar cookie texture, baked into convenient cups.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup powdered sugar
  • 1-2 tablespoons milk


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the brown sugar and cinnamon.
  7. Press about 1 tablespoon of cookie dough into the bottom and up the sides of each mini muffin cup.
  8. Sprinkle a small amount of the cinnamon-sugar mixture into each cookie cup.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Let the cookie cups cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  11. In a small bowl, whisk together the powdered sugar and milk until smooth. Add more milk if needed to reach desired drizzling consistency.
  12. Drizzle the icing over the cooled cookie cups.

Notes

  • For a stronger cinnamon flavor, you can add a pinch of cinnamon to the cookie dough itself.
  • Ensure the cookie cups are completely cool before drizzling with icing, otherwise the icing will melt.
  • Store leftover cookie cups in an airtight container at room temperature.
