Easy and festive pink velvet cookies perfect for Christmas baking.
Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon red food coloring
- 1 teaspoon white vinegar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 1/2 cups all-purpose flour
- 1/2 cup powdered sugar for rolling
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a small bowl, whisk together the cocoa powder, red food coloring, white vinegar, baking soda, and salt.
- Add the cocoa mixture to the butter mixture and mix until well combined.
- Gradually add the all-purpose flour, mixing until just combined. Do not overmix.
- Cover the dough and chill for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll the chilled dough into 1-inch balls.
- Roll each ball in powdered sugar until evenly coated.
- Place the cookie balls 2 inches apart on the prepared baking sheets.
- Bake for 10-13 minutes, or until the edges are set but the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a deeper pink color, you can add a little more red food coloring.
- Store cooled cookies in an airtight container at room temperature.
