Description

Easy and festive pink velvet cookies perfect for Christmas baking.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon red food coloring
  • 1 teaspoon white vinegar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar for rolling


Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a small bowl, whisk together the cocoa powder, red food coloring, white vinegar, baking soda, and salt.
  4. Add the cocoa mixture to the butter mixture and mix until well combined.
  5. Gradually add the all-purpose flour, mixing until just combined. Do not overmix.
  6. Cover the dough and chill for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Roll the chilled dough into 1-inch balls.
  9. Roll each ball in powdered sugar until evenly coated.
  10. Place the cookie balls 2 inches apart on the prepared baking sheets.
  11. Bake for 10-13 minutes, or until the edges are set but the centers are still slightly soft.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a deeper pink color, you can add a little more red food coloring.
  • Store cooled cookies in an airtight container at room temperature.
