Description

These cookies combine rich chocolate with a refreshing peppermint flavor, rolled in powdered sugar for a festive look.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 2 1/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar, for rolling


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the vanilla extract and peppermint extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls.
  7. Place the cookie balls onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, roll the cookies in powdered sugar until fully coated.

Notes

  • For a stronger peppermint flavor, you can add a few drops of peppermint extract to the powdered sugar before rolling.
