Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
- 2 1/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar, for rolling
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the vanilla extract and peppermint extract.
- In a separate bowl, whisk together the flour, cocoa powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into 1-inch balls.
- Place the cookie balls onto the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, roll the cookies in powdered sugar until fully coated.
Notes
- For a stronger peppermint flavor, you can add a few drops of peppermint extract to the powdered sugar before rolling.
