Description
A warming and revitalizing soup packed with the goodness of carrots and ginger.
Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 lb carrots, peeled and chopped
- 4 cups vegetable broth
- 1 tsp turmeric
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic and ginger and cook for 1 minute more until fragrant.
- Add carrots, vegetable broth, and turmeric. Bring to a boil.
- Reduce heat and simmer for 20 minutes, or until carrots are tender.
- Carefully transfer soup to a blender and blend until smooth. Alternatively, use an immersion blender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a thinner soup, add more vegetable broth.
- Garnish with fresh cilantro or parsley if desired.
