Carrot Ginger Detox Soup

Description

A warming and revitalizing soup packed with the goodness of carrots and ginger.


Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 lb carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 tsp turmeric
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic and ginger and cook for 1 minute more until fragrant.
  4. Add carrots, vegetable broth, and turmeric. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes, or until carrots are tender.
  6. Carefully transfer soup to a blender and blend until smooth. Alternatively, use an immersion blender.
  7. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a thinner soup, add more vegetable broth.
  • Garnish with fresh cilantro or parsley if desired.
