Ingredients
- 2 medium zucchini, sliced
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 large egg, beaten
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine Parmesan cheese, breadcrumbs, Italian seasoning, garlic powder, salt, and pepper.
- Dip each zucchini slice into the beaten egg, then dredge it in the Parmesan mixture, ensuring it is fully coated.
- Place the coated zucchini slices in a single layer on the prepared baking sheet.
- Drizzle with olive oil.
- Bake for 15-20 minutes, or until golden brown and tender. Flip halfway through baking for even crispiness.
Notes
- For extra crispiness, you can toast the breadcrumbs lightly before mixing them with the cheese.
