Description
Fresh and light lettuce wraps filled with shrimp, avocado, and mango.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 ripe avocado, diced
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 head butter lettuce, leaves separated
Instructions
- Cook shrimp in a skillet with olive oil until pink and cooked through. Season with salt and pepper. Let cool.
- In a bowl, combine cooked shrimp, diced avocado, diced mango, red onion, and cilantro.
- Add lime juice and toss gently to combine. Season with salt and pepper.
- Spoon the mixture into the butter lettuce leaves.
- Serve immediately.
Notes
- For extra spice, add a pinch of red pepper flakes to the shrimp mixture.
- You can substitute jicama for red onion for a different crunch.
