Description

A crisp and refreshing coleslaw with the tartness of cranberries and the sweetness of apples.


Ingredients

  • 1 bag (14 ounces) coleslaw mix
  • 1 cup shredded carrots
  • 1 cup chopped fresh apple
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large bowl, combine the coleslaw mix, shredded carrots, chopped apple, dried cranberries, and pecans (if using).
  2. In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
  3. Pour the dressing over the coleslaw mixture and toss to combine.
  4. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a tangier dressing, add an extra teaspoon of apple cider vinegar.
  • You can substitute walnuts for pecans if desired.
