A crisp and refreshing coleslaw with the tartness of cranberries and the sweetness of apples.
Ingredients
- 1 bag (14 ounces) coleslaw mix
- 1 cup shredded carrots
- 1 cup chopped fresh apple
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans (optional)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the coleslaw mix, shredded carrots, chopped apple, dried cranberries, and pecans (if using).
- In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
- Pour the dressing over the coleslaw mixture and toss to combine.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For a tangier dressing, add an extra teaspoon of apple cider vinegar.
- You can substitute walnuts for pecans if desired.
- Add a pinch of celery seed for an extra layer of flavor.
