Description

A quick and simple omelette featuring avocado and toast, made with just five ingredients.


Ingredients

  • 2 large eggs
  • 1/4 avocado, sliced
  • 1 slice whole wheat toast, cut into cubes
  • 1 tablespoon milk
  • Salt and pepper to taste


Instructions

  1. Whisk eggs with milk, salt, and pepper in a bowl.
  2. Heat a non-stick skillet over medium heat.
  3. Pour egg mixture into the skillet.
  4. Cook until the edges begin to set.
  5. Gently lift the edges and tilt the pan to allow uncooked egg to flow underneath.
  6. When the omelette is almost set, arrange avocado slices and toast cubes on one half.
  7. Fold the other half over the filling.
  8. Cook for another minute until heated through.
  9. Slide onto a plate and serve immediately.

Notes

  • You can add a sprinkle of red pepper flakes for a little heat.
  • Use your favorite type of bread for the toast cubes.
