Description
A quick and simple omelette featuring avocado and toast, made with just five ingredients.
Ingredients
- 2 large eggs
- 1/4 avocado, sliced
- 1 slice whole wheat toast, cut into cubes
- 1 tablespoon milk
- Salt and pepper to taste
Instructions
- Whisk eggs with milk, salt, and pepper in a bowl.
- Heat a non-stick skillet over medium heat.
- Pour egg mixture into the skillet.
- Cook until the edges begin to set.
- Gently lift the edges and tilt the pan to allow uncooked egg to flow underneath.
- When the omelette is almost set, arrange avocado slices and toast cubes on one half.
- Fold the other half over the filling.
- Cook for another minute until heated through.
- Slide onto a plate and serve immediately.
Notes
- You can add a sprinkle of red pepper flakes for a little heat.
- Use your favorite type of bread for the toast cubes.
